Ground bison (aka buffalo) meat is growing in popularity. It is remarkably lean. For more heat feel free to add hot sauces, or chopped chilli peppers (like Jalapenos) just before serving. The ground flax is optional, but very yummy.
Ingredients:
1 lb ground buffalo meat
3 tablespoons chili powder
4 garlic cloves, minced
1 green pepper, diced
1 large onion, diced
1 (10 ounce) can condensed tomato soup
1 (28 ounce) can tomatoes
1 cup low-sodium v8 juice
2 (14 ounce) cans baked beans (in tomato sauce)
1 (28 ounce) can kidney beans
1/4 cup ground flax seeds
Directions:
1. In a dutch oven, brown ground bison on med-high.
2. Add 3 cloves of garlic, 2 Tbsp of Chilli powder onion, and green pepper. cook for about 4 minutes.
3. Add tomato soup, canned tomatoes and v8. Allow to return to a simmer.
4. Add rinsed kedney beans, and both cans of baked beans.
5. Simmer for at least 15 minutes, or add to a slow cooker, and cook as long as you like.
6. Add ground flax, remaining chilli powder, and garlic just before serving.
