A no-mess lighter take on an appetizer favorite. Started as chicken meatballs, but I screwed up and they degenerated into this! Ingredients:
2lbs ground chicken |
12oz buffalo sauce (i use frank's) |
1 medium onion - minced |
1 cup bisquick |
1 cup shredded cheddar cheese |
1 tblsp garlic - minced |
salt/pepper to taste |
bleu cheese dressing for dipping (optional) |
Directions:
1. Combine ground chicken, cheese, sauce, onion, garlic, and salt/pepper in a large bowl and mix thoroughly (don't be a wuss, use your hands) 2. Gradually add the bisquick mixing in thoroughly 3. If the mixture is too soupy, add more bisquick. You want almost a biscuit dough consistency 4. Spoon out evenly onto a greased baking sheet (I use a melon baller) 5. Bake at 375 for approx. 15 minutes (depending on size of balls) 6. Let cool and enjoy. |
