Buffalo Cheeseburger Soup |

This can use Buffalo or ground beef. Ingredients:
1 tablespoon oil |
1 lb ground buffalo meat or 1 lb ground beef |
1 cup diced onion |
1 cup diced celery |
2 tablespoons sun-dried tomatoes packed in oil, diced |
1 teaspoon dried basil |
1 teaspoon salt |
3 cups chicken broth |
1/2 cup sour cream |
8 ounces cubed american cheese |
Directions:
1. Brown the meat, onion, celery and tomatoes in the oil over medium heat until meat is cooked through and veggies are pretty tender. 2. Add seasonings and broth. 3. Stir in sour cream and cheese, reduce heat to low and allow cheese to melt. 4. Do not let the soup boil after the dairy has been added. |
