Buffalo Black Beans N Beer Chili |

This is from the husband of a friend of mine. He swears it is awesome with the ground Buffalo...I've made it with ground beef, and it was really good that way. Ingredients:
2 tablespoons olive or vegetable oil |
2 large onions, chopped |
1 large green pepper, chopped |
1 to 2 teaspoons cayenne pepper |
1 tablespoon ground cumin |
1 pound ground buffalo (available at kroger) |
1 (12-ounce) bottle dark beer |
2 to 3 tablespoons chili powder |
3 (10-ounce) cans rotel brand tomatoes (with green chiles) |
3 (15-ounce) cans black beans, rinsed |
1 (15-ounce) can large white hominy, drained |
salt to taste |
Directions:
1. In a large pot, heat oil and saute the onions and green pepper for 5 to 10 minutes, adding the cayenne and cumin, until onions are translucent. 2. Add the buffalo and cook until browned. 3. Add the beer and chili powder, stir well. 4. Add the tomatoes, beans and hominy. 5. Add salt to taste. 6. Simmer for an hour or more. |
