This chicken meatball is surprisingly flavorful on it's own, but give it a toss in buffalo wing sauce(or the alternate BBQ sauce), and it becomes a crowd pleasing appetizer! As for the name...well, what else would I call them? Read more ? ;) Ingredients:
for meatballs |
2lbs ground chicken |
1 1/2 cups cracker crumbs(i used a fantastic gorgonzola one) |
2 eggs |
3t butter, melted |
2t light ale(not light, as in calories, but light, as opposed to dark ;) |
2 cloves garlic, minced |
1t ground celery seed |
1t dry mustard |
1/4-1t cayenne |
2 green onions, chopped |
2t fresh parsley, chopped |
3oz blue cheese crumbles(i used gorgonzola) |
to taste |
about 2 cups favorite hot wing sauce(or bbq sauce, or half of each) |
blue cheese and/or ranch dressing for dipping |
Directions:
1. In large bowl, combine all meatball ingredients, well. See Photo 2. Form into walnut sized meatballs and place on prepared baking sheet See Photo. I like to use an old cooling rack over an old cookie sheet for things like this. 3. Bake at 400 for about 20 minutes. See Photo 4. Toss meatballs in sauce, then place back in the oven(you can remove the cooling rack, now ;) and bake another 10 minutes or so. See Photo 5. Serve with dipping sauce, as desired. |
