One of my favorites for a weekend brunch. Ingredients:
buenos dias squares |
1 tsp. baking powder |
1/2 tsp. salt, optional |
6 eggs |
1/2 c. shredded cheddar cheese |
1 can (4oz.) chopped green chilies |
1/2 c. chopped red pepper |
2 tb butter, melted |
1 tb chopped cilantro |
1 tb jarred salsa, slightly chopped, optional |
Directions:
1. In large bowl, stir together baking powder and salt, if desired. Add egs beat until blended. Stir in remaining ingredients. Pour into greased 9 inch baking dish. 2. Bake in preheated 350 F. oven until knife inserted near center comes out clean, about 30-35 minutes. Let stand 5 minutes before serving. 3. Cut into 6 (2” x 4”) pieces. Serve with salsa, if desired. |
