Budget Friendly Creamy Onion Soup |

Just as the title says this one is easy on the pocketbook. I really enjoy this with a grilled cheese sandwich. It's great on cool evenings. You can use bullion insted of the broth. Ingredients:
2 quarts beef broth |
2 large onions, sliced thick, then quartered |
2 garlic cloves, minced |
1 teaspoon salt |
3/4 cup all-purpose flour |
1 cup heavy cream |
1/2 cup shredded monterey jack cheese |
crouton (optional) |
1/2 cup water |
Directions:
1. In large heavy pot, over medium heat, bring broth to a boil. 2. Place onions, salt, garlic into broth. 3. Lower heat to medium, simmer 30 minutes. 4. In a small bowl, stir flour into water until smooth. 5. Gently stir this mixture into broth until well incorperated. 6. Simmer 30 minutes more. 7. Stir in cream and cheese . 8. Stir gently, until cheese is melted and soup is warmed through. |
