Budget Farmer's Breakfast W/O Cheese

I make this when I don't have a lot of ingredients around the house. The kids seem to like it. I also like this because I can cook it in 1 skillet or pot.
Ingredients:
6 red potatoes, diced
1 yellow onion, diced (red works to)
1 lb pork sausage
6 large eggs
1 teaspoon fresh garlic
1 teaspoon garlic
1 teaspoon sea salt
1 (4 ounce) can mushrooms (optional)
1 teaspoon vanilla
1 tablespoon milk
Directions:
1. Start cooking the pork sausage on medium heat. While that is cooking, dice the potatoes and add.
2. When the potatoes and sausage are almost done, add the onion, spices, and mushrooms.
3. Whisk the eggs with milk and vanilla. Add to the skillet when the potatoes are done. Continually stir until eggs are cooked and serve.
