My kids like this casserole, they help make it. It's a money saver and I make this often. You can sprinkle your favorite cheese on top the last 1/2 hour of baking. This can be doubled for a potluck dinner. Ingredients:
1 lb ground beef |
1/2 cup uncooked rice |
3 large onions, sliced |
2 teaspoons salt |
1 large green pepper, chopped |
1 -2 teaspoon chili powder |
1 (16 ounce) can tomatoes |
1/8 teaspoon pepper |
Directions:
1. Heat oven to 350 degrees. 2. In large skillet, cook and stir meat, onion and green pepper until meat is brown and vegetables are tender. 3. Drain off fat. 4. Stir in tomatoes, rice, salt, chili powder and pepper; heat through. 5. Pour into ungreased 2-quart casserole. 6. Cover bake 1 hour. |
