Budget Busting Vegie and Noodle Cups |

These are a great after-school snack, easy enough for kids to make or parents to whip up quickly, and are very very cheap. Try different vegetables to use up whatever is in your fridge. Ingredients:
2 (85 g) packets two-minute noodles |
1 cup carrot, grated |
1 cup zucchini, grated |
1 cup pumpkin, grated |
2 eggs, lightly beated |
1/2 cup sour cream or 1/2 cup plain yogurt |
1/2 cup cheddar cheese, grated |
Directions:
1. Preheat oven to 180 degrees celcius. Lightly spray a texas-size muffin tray (1 cup volume moulds). 2. Cook noodles as directed on packet, reserving flavour sachets. Drain and rinse under cold water. Place in a mixing bowl. 3. Add remaining ingredients, except cheese, and stir well. 4. Spoon into muffin pans. Top with cheese and bake for 30-35 minutes until set. |
