Buckwheat Pancakes for a Bunch |

This is a favorite at our monthly parish breakfast. In the fall, I substitute 1/2 gal. of milk with 1/2 gal. of Apple Cider for a special treat. Ingredients:
12 cups all-purpose white flour |
3 cups buckwheat flour |
3 cups wheat flour |
1 cup baking powder |
1/4 cup salt |
1/4 cup baking soda |
18 eggs |
6 quarts whole milk |
Directions:
1. 1. Mix dry ingredients (first 5) together. 2. 2. Mix wet ingredients together. 3. 3. Mix wet mixture into dry mixture - mix thouroughly. 4. Preheat griddle at medium heat setting. 5. Ladle 1/2 to 2/3 cup per pancake onto lightly oiled griddle. 6. Cook for about 2 minutes per side. 7. These pancakes need to cook slower than normal pancakes or they will get too dark. Serve with berries, syrup or apple sauce.Enjoy! |
