These melt-in-your-mouth pancakes are my family's favorite and they are healthy too! If you choose, you can make them with plain whole wheat flour instead of buckwheat flour. Either way, they are absolutely delicious. Ingredients:
3/4 of a cup of buckwheat flour |
3/4 of a cup of all-purpose flour |
3 1/2 teaspoons of baking powder |
1/2 teaspoon of salt |
1 tablespoon of sugar |
1 1/4 cups of milk |
2 egg whites |
3 tablespoons of melted butter |
Directions:
1. 1. Sift together both flours, baking powder, salt and sugar in a large mixing bowl. 2. 2. Make a round opening in the center of the mixture and slowly pour in milk, egg whites and melted butter. 3. 3. Mix together until there is a smooth texture. 4. 4. Over medium-high heat, lightly oil a griddle or frying pan. 5. 5. Pour batter by 1/4 cupful onto the hot griddle. 6. 6. Brown pancakes on both sides. 7. 7. Serve with syrup or honey. 8. 8. Batter can be prepared the night before. If so, place covered in the refrigerator. |
