Buckwheat Pancake With Fruit + Yogurt |

My Sunday morning brekky I made 4 pancakes to last me for a few days. (suits my 'A Blood Type') The Buckwheat (ancient grain) pancake is soooo fluffy it just melts in your mouth - give it a try and you'll agree. Read more . Can be made as a sweet or savory dish. Hope you enjoy it as much as I enjoy it. Ingredients:
1 cup buckwheat pancake mix |
1 tablespoon dry soy drink powder |
1 teaspoon flaxseed |
1 egg |
1 cup water |
1 tablespoon butter (1/4 for each pancake) |
1 grated unpeeled red apple |
3 tablespoons berry soy yogurt |
maple syrup |
Directions:
1. Sift the pancake mix and soy drink powder into a bowl 2. Add flaxseed and mix 3. Beat egg in a separate bowl, add water and beat 4. Stir all ingredients into a smooth batter. 5. Heat pan then pour in batter to cover the bottom pan 6. Turn over when bubbles are all over and jelly like 7. Drizzle some Maple syrup onto a warm plate 8. Place pancake on the plate 9. Spread the yogurt, add the grated apple, drizzle a little more Maple syrup 10. Fold pancake and drizzle a little more Maple syrup over the top if you like it sweet. Enjoy :) |
