Ingredients:
1/2 cup buckwheat flour |
1/2 cup all-purpose flour |
1 teaspoon sugar |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1 large egg, lightly beaten |
1 1/4 cups well-shaken buttermilk |
2 1/2 tablespoons vegetable oil |
1/4 lb sliced canadian bacon, cut into 1/8-inch pieces |
Directions:
1. Preheat oven to 200°F. 2. Stir together flours, sugar, baking powder, baking soda, and salt. Add egg, buttermilk, and 2 tablespoons oil and stir just until blended. Stir in bacon. 3. Heat a griddle or large heavy skillet over moderate heat until hot, then lightly brush with remaining 1/2 tablespoon oil. Working in batches and using a scant 1/4 cup per pancake, pour batter onto griddle and cook, turning over once, until golden, about 4 minutes total per batch. Keep warm, covered, in oven. |
