This is my husbands favorite side dish. Buckwheat groats come already roasted. If they are not roasted, just saute them w/ an egg for a few minutes on med-high heat. You can find them at Whole Foods Markets (it is the only place I can find them). Ingredients:
1 onion, finely chopped |
3 clove garlic, minced |
2 bacon strips, chopped |
1/4 cup uncooked medium roasted buckwheat groats |
3/4 cup chicken stock |
1/3 cup coarsely chopped flat-leaf parsley (optional) |
salt and coarsely ground pepper to taste |
Directions:
1. Over medium heat. Stir in the onion, garlic, and bacon; cook until onions are soft and bacon is browned a bit (you can drain some of the bacon fat if you wish). 2. Add buckwheat; cook and stir until the buckwheat turns orangeish brown, about 5 minutes. 3. Add the stock and bring to a boil over medium-high heat. 4. Reduce the heat to low and simmer gently until the liquid is absorbed and the buckwheat is tender,13 to 15 minutes. 5. Toss with the parsley, and season to taste with salt and pepper. |
