This came from the Montana Cookbook, it was a post from when I use to belong to Prodigy. I've made these several times - my family loves this recipe. Ingredients:
2 1/3 cup dried pinto or red beans |
6 cups water |
1 large onion, chopped |
2 cloves garlic, minced (more if you like) |
1 bay leaf |
2 cups canned tomatoes |
1/2 cup chopped green pepper |
2 teaspoons chili powder |
2 tablespoons brown sugar |
1/2 teaspoon dry mustard |
1/4 teaspoon crushed oregano |
1/2 ob. smoked ham, bacon or salt pork |
salt to taste |
Directions:
1. Wash beans. Cover with water and let stand overnight. 2. To cook, cover and bring to boil, cook 2 minutes. 3. Remove from heat and let stand 1 hour. 4. Add onion, garlic and bay leaf and return to boiling. 5. Turn down heat and simmer 1 1/2 hours or until beans are almost tender. 6. Add tomatoes, green pepper, chili powder, brown sugar, mustard, oregano, meat and salt. 7. Bring to a boil again, reduce heat, and let cook slowly for 2 hours, or until liquid resembles a medium thick gravy. |
