Family Favorite for many years! For 'Special Occasions' ONLY!!! Ingredients:
8 medium size (white rose or red) potatoes, not russet potatoes |
6 eggs |
1 bunch green onions, tops and all, diced |
2 cups cheddar cheese, grated (use cheddar do not substitute) |
2 cups miracle whip salad dressing, yes , i said miracle whip |
this is the ingredient that sets this recipe apart from other recipes |
salt to taste |
Directions:
1. Boil potatoes, whole, with 'skins' on, till 'fork-tender' about 20 minutes 2. Drain water off potatoes, when cool enough to handle, peel and 3. cut into chunks 4. Boil eggs, peel and GRATE on cheese grater 5. Dice green onions 6. Grate Cheddar Cheese 7. In bowl gently fold ALL ingredients into the Miracle Whip 8. You still want to have the potatoes in chunks, NOT mushy! 9. Put into 2 quart casserole dish, either buttered or use PAM spray 10. Just heat through in a 325 degree oven, about 20 to 25 minutes 11. You do not want it to 'boil' 12. Before baking, for Extra flavor, sprinkle more grated cheese over top!!! 13. ENJOY! |
