Bubbe Leyah's Roasted Vegetables |

I don't know if this is Bubbe Leyah's actual recipe, but in my attempt to recreate her delicious roasted veggies, this is what I came up with. It's pretty outstanding. Ingredients:
3 large beets, peeled and cut into chunks |
2 large sweet potatoes, cut into chunks |
3 medium red potatoes, cut into chunks |
1 lb asparagus, cut into 1-inch pieces |
1 medium yellow onion, sliced |
5 garlic cloves, sliced |
3 tablespoons olive oil |
2 teaspoons garlic powder |
1 teaspoon salt |
Directions:
1. Preheat oven to 400°F Line a 9x13 pan with parchment paper. 2. Toss beets with 1 T of olive oil. Spread evenly into pan, and cook for 15 minutes. 3. While the beets are cooking, combine sweet potatoes, red potatoes, asparagus, onion and garlic cloves together in a large bowl. 4. In a small bowl, whisk together remaining olive oil, garlic powder and salt. Add to the bowl of vegetables and toss well. 5. When the beets have cooked for the 15 minutes, add the veggie mixture to the pan and stir together. 6. Cook another 40-50 minutes, stirring half-way through. |
