Brussels Sprouts with Raisins and Pine Nuts |

Thought you didn't like Brussels sprouts? Once you try this sweet yet savory side, you're sure to change your mind. Ingredients:
1 pound brussels sprouts, trimmed and halved |
1/3 cup golden raisins |
2 tablespoons pine nuts |
1/4 cup apple juice |
1 teaspoon cider vinegar |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
2 slices 40%-reduced-fat bacon (such as gwaltney), cooked and crumbled |
Directions:
1. Cook Brussels sprouts in boiling water to cover 4 minutes or until crisp-tender; drain well. 2. Transfer Brussels sprouts to a large nonstick skillet. Add raisins and pine nuts; cook over medium-high heat 5 minutes or until lightly browned. Add apple juice and next 3 ingredients; cook 1 minute. Stir in bacon. |
