Brussells Sprouts Lardons |

Ingredients:
1 3/4 cup(s) broth |
1 1/2 pound(s) brussels sprouts, trimmed and cut in half |
3/4 teaspoon(s) fresh ground pepper |
1/2 cup(s) gold raisins |
3/4 teaspoon(s) kosher or sea salt |
2 tablespoon(s) olive oil |
6 ounce(s) pancetta or bacon diced |
Directions:
1. Heat olive oil in large saute pan and add pancetta. cook over medium heat until crisp. Remove and drain on paper towel. 2. Add sprouts, salt and pepper to the fat in the pan and saute over medium high heat until lightly browned. Add the raisins and the broth. Lower the heat and cook uncovered, stirring occasionaly, until tender. Return the pancetta to the pan, heat through and adjust salt and pepper if needed. |
