Brussel Sprout “cole Slaw” |

fresh, simple cold salad to snack on or to accompany any meal. Ingredients:
1lb fresh brussel sprouts |
1 bell pepper of your choice (i used two small ones from my garden) |
1 carrot |
2 tbs fresh parsley |
juice of 1 lemon and 1 lime |
1 tbs olive oil |
1 tbs vinegar of your choice |
salt & pepper |
opt: onion, dried cranberries, or/and fresh shaved parmesan cheese or any other fresh peppers you’d like to add |
Directions:
1. slice/shred sprouts and shred carrot. 2. dice peppers and onions to the size of your choice. 3. mince parsley. 4. toss everything together and top with a parsley sprig. |
