Bruschetta With Tomato and Basil |

This recipe is from Rachel Ray, and is just like we get when we go out to Italian restaurants. Ingredients:
1/2 baguette, sliced, 12 pieces |
2 large garlic cloves, peeled and cut in half |
1 tablespoon extra virgin olive oil |
3 plum tomatoes, seeded and chopped |
20 fresh basil leaves, sliced thin |
1 teaspoon kosher salt |
Directions:
1. Preheat broiler to high. 2. Place bread slices on a pan and toast under the broiler - keep an eye on it! 3. Remove toast from the broiler and rub with cut garlic. 4. Place tomatoes, basil, olive oil and salt in a small bowl, and gently toss to coat. 5. Serve with toast. |
