BRUSCHETTA WITH AVOCADO AND GREEN ONIONS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Ellis Estate in Fort Worth, Texas in 1980. Ingredients:
1 ripe avocado |
1 teaspoon fresh lemon juice |
1 teaspoon salt |
2 slices country bread thick slices |
1 garlic clove peeled cut in half |
2 green onions tops trimmed and thinly sliced |
extra virgin olive oil |
Directions:
1. Peel avocado then place in a bowl and mash coarsely with a fork adding lemon juice and salt. 2. Grill bread and rub with the cut side of the garlic clove and drizzle with olive oil. 3. Mound avocado mixture on top of bread slices and sprinkle with green onions. 4. Drizzle a few drops of olive oil over the top. |
