This is a wonderfully flavorful recipe for a bruschetta which combines the flavors of tomatoes with olives and capers! Great on toasted baguette slices! Ingredients:
2 cups minced roma tomatoes |
1 1/2 teaspoons capers |
2 tablespoons chopped kalamata olives |
1 tablespoon chopped fresh basil |
1 tablespoon extra-virgin olive oil |
1/4 teaspoon salt |
1/4 teaspoon balsamic vinegar |
1/8 teaspoon pepper |
Directions:
1. Combine all the ingredients; cover and let stand 30 minutes. Drain the tomato mixture. |
