This is really good as a meatless main dish, or a side dish served with meat. I'm sure it can be made with fresh ingredients but I use canned tomatoes and dried spices because that's what I always have on hand.
Ingredients:
1 lb spaghetti (i use whole wheat)
1 (28 ounce) can diced tomatoes
1 teaspoon olive oil
3 garlic cloves, minced
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon onion powder
salt and pepper
1/4 cup balsamic vinegar
1/3 cup parmesan cheese
Directions:
1. Cook pasta according to directions.
2. Saute garlic in olive oil for 1 minute.
3. Add remaining ingredients except Parmesan cheese.
4. Turn heat to low and simmer, covered for 10 minutes.
5. Toss sauce with spaghetti and Parmesan cheese and serve.
