Ordinarily, I'm not big on using processed foods but this is a quick and easy dinner that really tastes great. This recipe is originally from a canister of Stove Top Stuffing, but it's been tweaked a bit Ingredients:
1 (15 ounce) can diced tomatoes with onion and garlic |
2 cups chicken stove top stuffing mix |
1/2 cup hot water |
2 garlic cloves |
1 lb boneless skinless chicken breast, cut into bite-size pieces |
1 teaspoon dried basil |
1 tablespoon italian seasoning |
1 cup shredded mozzarella cheese |
grated parmesan cheese |
Directions:
1. In a medium bowl, mix together canned tomatoes (with their juices), hot water, stuffing mix, and garlic. Stir just until moistened. 2. Spray 9x13 baking dish with non-stick spray, and place chicken pieces in dish. 3. Sprinkle with basil, Italian seasoning, and mozzarella. Top with prepared stuffing. 4. Bake at 400 for 30 minutes, or until chicken is thoroughly cooked 5. Top with Parmesan cheese. |
