With a high Tomato crop this year I have been using tomatoes for everything BLT - BET (bacon, egg and tomato) and my fav bruschetta Ingredients:
3 cups tomato (diced but not deseeded, allow juices to come to top and remove the juice you can save this for any other purpose) |
1/2 cup red onion (minced) |
3 tbsps basil (minced) |
1/2 cup extra virgin olive oil |
1/3 cup balsamic vinegar (this is one time you don't want to skimp on cost it does matter) |
1/2 tsp kosher salt |
1/4 tsp sugar |
Directions:
1. Combine all ingredients and allow to sit for 12 to 24 hours serve over freshly roasted crustinie - a curl of Pecorino Romano and you have a great appie!! enjoy! |
