appetizer Ingredients:
3 lbs ripe plum tomatoes, diced |
6 cloves garlic,iced |
1/2 cup olive oil |
1/4 cup cheese,locatelli |
1 salt |
1 pepper |
1 tbsp. dried parsley |
Directions:
1. Dice tomatoes and put in a strainer with container underneath so juices from toamtoes drain away. In a separate small container, put olive oil. Dice or mince fresh garlic and put into container with the olive oil. Let this sit , preferable overnight, so oil mixture gets garlic flavor. When ready to use, put tomatoes in large bowl and add oil/garlic mixture. Add Locatelli cheese, salt and pepper, and parsley. Stir to mix. Sprinkle top with a little more parsley. Serve with taosted baguette bread. Serve tomato mixture surrounded with bread and 2 spoons. |
