3 tablespoons flour |
2 garlic cloves, minced |
1/4 teaspoon cayenne pepper |
2 pounds boneless chicken thighs, cubed |
2 slices bacon in 1 pieces |
2 cups onions, thinly sliced |
1 red bell pepper in 1/2 strips |
1 green bell pepper in 1/2 strips |
10 ounces lima beans, thawed if frozen |
1 (14.5 ounce) can diced tomatoes |
1 tablespoon cider vinegar |
1 cup chicken broth |
1 tablespoon worcestershire sauce |
Directions:
1. Combine flour, garlic and cayenne in a bowl. 2. Add chicken pieces and toss to coat. 3. Heat a Dutch oven over medium high heat. 4. Cook bacon. 5. Remove to plate to drain. 6. Add chicken to pot and cook until browned on all sides, about 8 minutes. 7. Add onions, peppers and lima beans and cook about 2 minutes more. 8. Add tomatoes, vinegar, broth and Worcestershire sauce. 9. Return bacon to pot. 10. Bring to a boil. 11. Reduce heat to medium and simmer 30 minutes. 12. Stew liquid will thicken to the consistency of gravy. |
