Ingredients:
3 tablespoons flour
2 garlic cloves, minced
1/4 teaspoon cayenne pepper
2 pounds boneless chicken thighs, cubed
2 slices bacon in 1 pieces
2 cups onions, thinly sliced
1 red bell pepper in 1/2 strips
1 green bell pepper in 1/2 strips
10 ounces lima beans, thawed if frozen
1 (14.5 ounce) can diced tomatoes
1 tablespoon cider vinegar
1 cup chicken broth
1 tablespoon worcestershire sauce
Directions:
1. Combine flour, garlic and cayenne in a bowl.
2. Add chicken pieces and toss to coat.
3. Heat a Dutch oven over medium high heat.
4. Cook bacon.
5. Remove to plate to drain.
6. Add chicken to pot and cook until browned on all sides, about 8 minutes.
7. Add onions, peppers and lima beans and cook about 2 minutes more.
8. Add tomatoes, vinegar, broth and Worcestershire sauce.
9. Return bacon to pot.
10. Bring to a boil.
11. Reduce heat to medium and simmer 30 minutes.
12. Stew liquid will thicken to the consistency of gravy.
