A spicy, zesty Texas spin on a Southern style dish. I taught my duaghter and nephew how to prepare this dish and they absolutely LOVED it! The results were fantastic!
Ingredients:
1lb. chicken breast- grilled/ chopped
1lb. smoked pulled pork
1lb smoked beef sausage- grilled
1-28oz. can of crushed tomatoes
1- 29oz. can of whole kernel canned corn- drained
2- 10oz. cans of rotel original diced tomatoes w/ green chilies
2 large vidalia onions-diced
1 green pepper- diced
1 tsp salt
1 tsp black pepper
approx. 1/2 tsp. of the following
thyme, oregano, ground cumin, ground mustard, cayenne pepper, paprika, crushed red pepper, & chili powder
2 bay leaves
32oz. of chicken stock
1-1/4 cup of liquid smoke
1- 1/4 cup worcestershire sauce
2 tbs. of texas pete
grill chicken and sausage on a grill pan, reserve juice for the stew. i usually add all of the above ingredients with exception of the pulled pork. my pork will be smoking and i will add the pork before serving. cook on low approx. 6 hrs. in a crock-pot. if using a dutch oven, heat to boil then simmer for at least 2 hrs.
