This is a lovely southern stew that only needs a crockpot! Ingredients:
1 whole chicken, about 3 lb |
2 qts water |
1 onion -- chopped |
2 cups ham; cooked -- cubed |
3 large potatoes -- diced |
2 16 oz. cans chopped tomatoes |
10 oz lima beans -- frozen and partially thawed |
10 oz corn -- whole kernel, frozen and partially thawed |
4 oz okra, sliced into coins |
2 tsp salt |
1 tap sugar |
1/4 tsp pepper |
1/2 tsp seasoned salt |
Directions:
1. In a crockpot combine chicken with water, onion, ham, amd potatoes. 2. Cook covered on LOW for 4 to 5 hours or until chicken is done. 3. Lift chicken out of pot; and remove meat from bones. 4. Return chicken meat to pot. (keep carcass to make chicken stock). 5. Add tomatoes, beans, corn, salt, seasoned salt, sugar and pepper. Turn control to HIGH. 6. Cover and cook on HIGH 1 hour. 7. Serve in large individual bowls with crusty rolls, or serve in bread bowls.. |
