Ready, Set, Cook! Special Edition Contest Entry: This casserole makes a wonderful lazy weekend brunch. Very colorful. the cumin and cilantro give it a flair that takes it out of the ordinary. It is Very important to drain the spinach really well, or you'll have water in your casserole ! Ingredients:
1 (20 ounce) bag simply potatoes® shredded hash browns |
1 medium red bell pepper, chopped |
1 medium onion, chopped |
1 lb bacon, fried, drained, & crumbled |
1 (4 ounce) jar sun-dried tomatoes, drained and chopped |
1 cup monterey jack cheese |
1 teaspoon cumin |
2 teaspoons dried cilantro |
seasoning salt |
pepper |
5 large eggs, beaten |
1/2 cup milk |
1 teaspoon baking powder |
Directions:
1. combine all ingredients except eggs,milk & baking powder in large bowl. 2. mix well & transfer to 2 qt casserole. 3. beat eggs,milk, & baking powder together & pour over casserole. 4. bake at 350 for 1 hour. |
