Ready, Set, Cook! Special Edition Contest Entry: This casserole makes a wonderful lazy weekend brunch. Very colorful. the cumin and cilantro give it a flair that takes it out of the ordinary. It is Very important to drain the spinach really well, or you'll have water in your casserole !
Ingredients:
1 (20 ounce) bag simply potatoes® shredded hash browns
1 medium red bell pepper, chopped
1 medium onion, chopped
1 lb bacon, fried, drained, & crumbled
1 (4 ounce) jar sun-dried tomatoes, drained and chopped
1 cup monterey jack cheese
1 teaspoon cumin
2 teaspoons dried cilantro
seasoning salt
pepper
5 large eggs, beaten
1/2 cup milk
1 teaspoon baking powder
Directions:
1. combine all ingredients except eggs,milk & baking powder in large bowl.
2. mix well & transfer to 2 qt casserole.
3. beat eggs,milk, & baking powder together & pour over casserole.
4. bake at 350 for 1 hour.
