I love grits and this is a favorite dish of ours, kind of a southwestern flavor. I got this recipe,and tried it from Ingredients:
1 cup uncooked quick grits |
4 cups water |
1 (11 oz) can corn with red and green peppers, drained |
1 (9oz) pkg. frozen spinach, thawed |
1 pkg. taco seasoning mix |
2 tablespoons chopped onion |
2 tablespoons butter or margarine |
2 cups shredded cheddar cheese |
Directions:
1. Preheat oven to 350.F 2. In a large saucepan, bring water to a boil. Gradually stir in grits. Cover; reduce heat to low. 3. Cook 5 minutes, stirring occasionally. 4. In ungreased 9x13-inch (3 quart) bakig dish, combine cooked grits and all remaining ingredents except 1 cup of the cheese; mix well. Sprinkle with remaining cheese. 5. Bake for 22 to 27 minutes or until edges are bubbly and cheese is melted. |
