i like making this when we have company,because you make them the day before. Ingredients:
1 lb sausage, browned and cooled |
1/4 cup green onion, chopped |
1/4 cup celery or 1/4 cup green pepper, chopped |
2 cups grated cheese |
8 (8 inch) flour tortillas |
4 eggs |
2 cups milk |
1 tablespoon flour |
1/2 teaspoon garlic powder |
2 cups grated cheese |
chopped green onion, to garnish |
tomato, to garnish |
Directions:
1. mix sausage, green onion celery or green pepper. 2. mix eggs milk flour and garlic powder. 3. place 1/2 cup meat mixture in middle of tortilla. 4. roll and place in 9 x 13 inch pan seam side down. 5. pour egg mixture over rolls. 6. cover and refrigerate overnight. 7. bake coverd 45 to 50 minutes or until set. 8. sprinkle with cheese bake 5 more minutes. 9. let stand 10 minutes before serving. 10. garnish with green onion and chopped tomatoes. 11. serve with enchilada sauce if desired. |
