An tummy warming and tummy filling omelet that is perfect for those special mornings.
Ingredients:
pat of butter (optional)
1 - 2 slices deli ham, diced
pepperoni slices, diced or chunked
2 - 3 eggs, well beaten
fresh ground black pepper
1 - 2 slices cheese of choice
depending on how fatty your pepperoni is will depend on if you need to melt a pat of butter in your pan.
saute ham and pepperoni; pour beaten eggs over; cook; loosen edges with a spatula and flip (be sure to catch it in the pan!) to cook other side.
place cheese slice on one half while cooking the bottom; fold in half and top with additional cheese, if desired.
transfer to serving plate and enjoy ith your favorite toast.
