Brötchen Ingredients:
2 1/2 to 3 cups bread flour |
1 tablespoon sugar |
1 teaspoon salt |
1 package active dry yeast |
1 tablespoon oil |
1 cup warm water |
1 egg white |
Directions:
1. Pour 2 1/2 cups flour into a large bowl and make a well. 2. Pour yeast, sugar and two tablespoons of warm water (taken from the one cup of warm water listed above) in the well. Mix yeast, sugar and water carefully within the well. Do not mix with the flour at this time. Cover bowl with a towel and let rest for fifteen minutes. 3. Add the salt, remaining water, and oil and beat until mixed. Turn out on counter and knead until smooth. Add the remaining flour as needed to keep douygh from being sticky. Put dough in a greased bowl and let rise until double in size. Punch down and make rolls as you like, oval shape, biscuit shape, etc and place on a greased cookie sheet. Cover and let rise until double in size. Beat egg white and 1 teaspoon water until frothy and brush on the rolls. Bake in a preheated oven at 450 degrees for 15 to 20 minutes until golden brown. 4. IMPORTANT: place an oven proof bowl or pan filled with water in th ebottom of the oven to provide moisture as the rolls bake. |
