I found this in Health For Women magazine. I have not tried these brownies. I plan to use Splenda for baking for the sugar.
Ingredients:
3 eggs
1 cup sugar
1/2 cup oil
2 tablespoons unsweetened cocoa
1/2 cup potato starch
1 cup nuts, chopped
Directions:
1. Beat the eggs and sugar until light and fluffy. Gradually add the oil, then the cocoa and potato starch. Blend together. Stir in the chopped nuts.
2. Pour into a lightly greased 9-inch square pan. Bake at 350 for 30 minutes. Cut into squares.
