This recipe came from Introducing Cottage Cheese. I have not tried this, just posting for safe keeping. Ingredients:
1 cup borden cottage cheese |
1 1/3 cups sugar |
3 tablespoons butter or 3 tablespoons margarine, softened |
3 eggs |
1 cup flour, sifted plus 3 tablespoons |
1 1/2 teaspoons vanilla extract |
1/2 cup shortening |
2 ounces unsweetened chocolate squares, melted |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
1 cup coarsely chopped nuts |
Directions:
1. Preheat oven to 375. 2. In small bowl, mix together cheese, 1/3 cup sugar, butter, 1 egg, 2 tablespoons flour and 1 teaspoon vanilla; set aside. In large mixer bowl, cream together shortening and remaining sugar, adding sugar gradually. Add remaining eggs, 1 at a time, beating well after each addition. Stir in chocolate. Sift together remaining flour, baking powder and salt; stir into chocolate mixture. Blend in nuts and remaining vanilla. Spread half the chocolate batter into bottom of greased 9-inch square baking pan; spoon cheese mixture evenly over top. Spoon remaining chocolate batter over cheese mixture; with knife, swirl batter. 3. Bake 35-40 minutes or until top surface is firm. |
