Serve these chewy, chocolate cookies with a tall glass of fat-free milk. Ingredients:
1/4 cup butter |
1 ounce unsweetened chocolate, chopped |
1 cup sugar |
1/2 cup unsweetened cocoa |
2 large eggs |
2 teaspoons vanilla extract |
1 cup uncooked regular oats |
1/4 cup all-purpose flour |
1/2 teaspoon baking powder |
1/8 teaspoon salt |
cooking spray |
Directions:
1. Preheat oven to 350°. 2. Microwave butter and chocolate in a small bowl at HIGH 35 seconds or until chocolate begins to melt. Stir chocolate mixture until smooth. 3. Beat chocolate mixture, sugar, and next 3 ingredients in a large bowl until smooth. 4. Combine oats, flour, baking powder, and salt; add to butter mixture, stirring just until blended. Drop by rounded teaspoonfuls 2 inches apart onto baking sheets coated with cooking spray. 5. Bake at 350° for 8 to 9 minutes or until cookie centers are almost done. Cool 5 minutes on pans. Remove from pans; cool completely on wire racks. |
