This was in my electric co-op magazine. I am posting here before I lose the page I tore out. Again, I am guessing at the prep time! I have not tried this yet. Ingredients:
1 cup butter |
1 cup semi-sweet chocolate chips |
1 cup chopped pecans |
4 eggs |
1 1/2 cups sugar |
1 cup all-purpose flour |
1 teaspoon vanilla extract |
Directions:
1. In a saucepan over low heat, melt the butter and chocolate chips, stirring until smooth. 2. Cool. Add pecans; stir until well coated. 3. In a large bowl, combine eggs, sugar, flour and vanilla. 4. Fold in the chocolate mixture. 5. Fill paper lined muffin cups 2/3 full. 6. Bake at 325 degrees for 35 to 38 minutes or until a toothpick inserted near the center comes out clean. |
