Easy to make with a wonderful mild chocolate flavor. I usually ice them with a mocha frosting. Ingredients:
1/4 c plus 2 tbs. flour |
pinch of salt |
1/2 stick unsalted butter,cut in 4 pieces |
2-1/2 ounces bittersweet chocolate,coarsely chopped |
1/3 c (packed)lt brown sugar |
1/2 tsp vanilla |
1 large egg |
Directions:
1. Center a rack in oven and preheat to 350 degrees. Line mini muffin pan with liners and set aside. 2. Whisk together flour and salt. 3. Melt butter,chocolate and brown sugar in medium heavy-bottomed saucepan over ver low heat,stirring frequently with a heatproof spatula. When mixture is smooth,remove from the heat and cool a min. or two. 4. Stir in vanilla and egg into chocolate mixture. When mixture is well blended,add flour and stir till it is incorporated. You should have a smooth,glossy batter. 5. Spoon batter into 12 muffin cups,using about 1-1/2 tsps. of batter to fill each 3/4 full. 6. Bake 14-16 mins. or till tops of buttins spring back when touched. Transfer pan to rack to cool for 3 mins before carefully releasing buttons. Cool to room temperature on rack. 7. Note:Since these are small,you really need to watch the time. They go from done to overdone in the blink of an eye. |
