If you like brownies, you'll love this pie!! I found this recipe in a Company's Coming cookbook. My family doesn't have a big sweet tooth, and this pie was just the right bit of sweetness. It has a nice, light chocolatey flavour. Ingredients:
3 egg whites, room temperature |
1/8 teaspoon salt |
1/4 teaspoon cream of tartar |
3/4 cup granulated sugar |
3/4 cup chocolate wafer crumbs |
1/2 cup chopped pecans or 1/2 cup walnuts |
1/2 teaspoon vanilla |
1 cup whipping cream |
2 tablespoons cocoa |
1 tablespoon granulated sugar |
1/2 teaspoon vanilla |
2 tablespoons grated chocolate |
Directions:
1. For the meringue crust, beat egg whites, salt and cream of tartar until a it forms a stiff froth. Add the sugar gradually, until the mixture is very stiff and the sugar is dissolved. 2. Fold in wafer crumbs, pecans and vanilla. Spread in a greased 9 inch pie plate pressing the mixture up the sides slightly to form a shell. Bake in 325F oven about 35 minutes until dry. Cool. 3. To make the filling you beat the whipping cream, cocoa, sugar and vanilla in a small bowl until stiff. Spread over pie. 4. For a garnish sprinkle with grated chocolate. |
