From Mrs. Fred C. Meyer (Marcia Marron) of the San Antonio Junior League. This has crisp bacon and regular rice flavored with beef broth, onion, cumin and oregano too. Ingredients:
3 slices bacon |
1 1/2 cups rice, uncooked |
2 (10 1/2 ounce) cans beef broth |
1 large onion, chopped, about 1 1/2 cups |
1 teaspoon dried oregano |
1 teaspoon cumin seed, crushed |
Directions:
1. Fry the bacon until crisp, drain and crumble. 2. Reserve 2 tablespoons of bacon drippings and add the rice to the drippings, heating and stirring until well browned. 3. Add broth, onions, spices and bacon and cover and cook 15 minutes. |
