These have Wheaties cereal in them, but I think any bran flake-type cereal would work. Ingredients:
1/3 cup butter, softened |
1/2 cup brown sugar, packed |
2 eggs |
1 cup wheat flakes cereal |
1/2 cup milk |
1 teaspoon vanilla extract |
1 1/4 cups flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon salt |
Directions:
1. Preheat oven to 400°F 2. Line muffin cups with paper cupcake liners or spray with cooking spray. 3. Cream together butter and brown sugar; add eggs, one at a time, beating well after each addition. 4. Stir in cereal. 5. Combine milk and vanilla in a small dish. 6. Combine flour, baking powder and salt in another bowl; add to the creamed mixture alternately with milk mixture, beating just until moistened. 7. Fill muffin cups 2/3 full. 8. Bake for 13-15 minutes or until a toothpick comes out clean. 9. Cool for 5 minutes before removing from pan to finish cooling on a wire rack. |
