Brown-Sugar-Glazed Green Beans |

This recipe features smoky bacon, oniony shallots and a touch of brown sugar. Ingredients:
2 lbs green beans, trimmed |
4 slices bacon, cut into 1-inch pieces |
2/3 cup shallot, sliced |
1 tablespoon fresh thyme, chopped (or 1 t dried thyme) |
2 tablespoons packed light brown sugar |
1 tablespoon apple cider vinegar |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. Bring large pot of salted water to boil. 2. Add beans, cook just until tender but still bright green, 5 minutes. 3. Drain well. 4. Meanwhile, in large skillet over medium-high heat, cook bacon until lightly browned, 5 minutes. 5. Add shallots and thyme; cook until shallots are tender and bacon is crisp, 3 minutes. 6. Stir in sugar; cook until golden, 2 minutes. 7. Add beans; toss well. 8. Stir in vinegar, scraping up browned bits from bottom of pan. 9. Stir in salt and pepper. |
