From Cooking Light March 2010 Ingredients:
cooking spray |
2 1/2 cups whole wheat flour |
1/2 cup all-purpose flour |
1/2 cup steel cut oats |
2 tablespoons brown sugar |
1 tablespoon wheat germ |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
2 cups low-fat buttermilk |
1 large egg, lightly beaten |
Directions:
1. Preheat oven to 325. 2. Coat 9 x 5 inch loaf pan with cooking spray. linte the pan with parchment paper, and coat with cooking spray. 3. Lightly spoon flours into dry measuring cups, and level with a knife. Combine flours and next 6 ingredients (through salt). 4. Combine buttermilk and egg. 5. Add to flour mixture and stir until just combined. 6. Spoon the mixture into prepared pan. 7. Bake at 325 for 1 hour and 5 minutes or until a wooden pick inserted in centre comes out clean. 8. Invert bread onto wire rack, cool completely. Remove parchment. 9. Slice bread into 12 pieces. |
