Brown Rice With Garlic and Green Onions (Vegan) |

From Giant Food Healthy Ideas, a yummy way to make brown rice with fresh ingredients when you got them. Healthy, yummy and vegan! Water will do in place of broth if you don't have any. Ingredients:
2 1/2 cups vegetable broth or 2 1/2 cups stock |
1 cup uncooked brown rice |
1 teaspoon olive oil |
3 garlic cloves, peeled and diced |
1/4 cup sliced green onion (about 3-4 green onions) |
Directions:
1. Bring the broth or water to a boil in a medium saucepan, then add the rice, loosely cover, and reduce heat. 2. Simmer for 35-40 minutes or until the rice is tender and most of the water has absorbed. 3. In the last 5 minutes or so of the rice cooking, heat the oil in a frying pan, add the garlic and saute until browned. 4. When the rice is done cooking, add the sauteed garlic and green onions to the cooked rice, fluffing with a fork to combine. |
