Brown Rice Veggie Stir Fry |

This is a very light, tasty, and satisfying meal for any season. I've made this recipe several times. Ingredients:
2 tablespoons water |
2 tablespoons gluten-free soy sauce |
1 tablespoon olive oil |
1 zucchini, chopped |
1/2 cup mushroom, sliced |
1/2 cup onion, chopped |
2 cups brown rice, cooked |
1/4 cup carrot, grated |
Directions:
1. In a large skillet, combine the water, soy sauce, and oil. Add the zucchini, mushrooms and onion; stir fry for 4-5 min or until crisp tender. Add the rice and carrot, stir fry for 2-3 min or until heated through. |
