Vegan Ingredients:
1 cup brown rice |
15 oz canned black beans |
1 cup corn |
1/4 cup scallions |
2 tbsn cilantro |
2 tsp jalapeno peppers, minced |
1 tbsn lime juice |
1/4 tsp salt |
1/4 tsp pepper |
Directions:
1. Cook rice according to directions on package. 2. While rice is still warm, stir in all ingredients. Serve! |
