BROWN RICE PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boyd Estate in Dallas, Texas in 1987. Ingredients:
1 cup brown rice |
10 tablespoons apple juice frozen concentrate |
1-1/2 cups evaporated skim milk |
2 eggs |
1/2 teaspoon cinnamon |
1/2 cup raisins |
slivered almonds |
Directions:
1. Cook rice as usual but replace 6 tablespoons water with 6 tablespoons juice concentrate. 2. Beat remaining ingredients except nuts together in pot then mix in rice. 3. Cook 10 minutes until thick stirring constantly then spoon into dishes and chill. 4. Sprinkle with nuts. |
